Chef Renée's Peach Caipirinha Pops

I reside in Chicago and the summers here can get unreasonably hot. Some days, an icy cocktail just isn’t enough to cool off, so I’ve started turning cocktails into popsicles. My partner is from São Paulo, Brazil and naturally one of the first popsicles I made was a caipirinha pop. Caipirinha is the national drink of Brazil and traditionally made with lots of lime juice, cane sugar and cachaça. Cachaça, similar to rum, is distilled from fermented sugarcane juice and has a funky, spicy and sweet flavor. In an effort to blend my love for seasonal produce with my partner’s heritage, I added peaches whose floral notes pair well with the sweet and sour flavor of caipirinhas. Peaches are not the only fruit that could pair well here: crushed grapes, raspberries or plums would be great just to name a few. I recommend heading to your local farmers market for some seasonal inspiration.
