Netflix and Grill With Chef Cameron

Some of the best memories from my childhood involved eating chocolate chip cookies and watching anime late into the night. There is something about the genre that always has me coming back. From the amazing, fast-paced jazz found in Cowboy Bebop to the breathtaking storytelling and graphics of Your Name (Kimi no Na Wa), each movie or series brings something new and exciting to the table. Some of the shows and movies I’ve been watching include Persona 3, Castlevania, Assassination Classroom, A Silent Voice and One-Punch Man.

I’ve found myself reverting to my old ways, but this time, the cookies got a bit of an upgrade.
Toasted Sesame & Miso Chocolate Chip Cookies
Makes 6 cookies

Ingredients
1 stick Butter, soft
1/2 cup Granulated Sugar
1/2 cup Brown Sugar, dark
1/2 tsp Kosher Salt
1/4 tsp Baking Soda
1/2 cup Red Miso Paste
2 tsp Vanilla Extract
1 each Egg, large
2 tbsp Toasted Sesame Oil
3.5 oz Semi-Sweet Chocolate, chopped
1.5 cup All-Purpose Flour
3 tbsp Toasted Sesame Seeds                    
Directions
  1. Cream together butter, sugars, salt, baking soda and miso paste in a stand mixer with the paddle attachment until light and creamy, about 2-3 minutes.
  2. In a small bowl, whisk together the vanilla, egg and toasted sesame oil until combined.
  3. Turn stand mixer onto medium speed and slowly drizzle in egg mixture, scraping down as necessary.
  4. Beat for 3 minutes or until fluffy.
  5. Add in the remaining ingredients and mix until combined.
  6. Cover the bowl with plastic wrap and allow dough to rest in the fridge for at least 3 hours. 
  7. Portion cookie into 2 oz balls and place onto a lined sheet pan.
  8. Bake at 350°F for 15-18 minutes or until golden brown.
  9. Remove from the oven and transfer to a wire rack to cool down.
  10. Serve with a tall glass of milk and enjoy… Itadakimasu ( ^ω^ )!
Chef's Notes
  • Don’t skimp on the chocolate! Try and find a high-quality chocolate bar; you’ll thank me later.
  • Resting the cookie dough isn’t necessary, but it does help with the spread and flavor of the cookies.
    • If time permits, resting overnight achieves great results!

October 19, 2022 Canada is well known for many things. Hockey, snow, maple syrup, and a few other stereotypical but somewhat accurate concepts may immediately come to mind. What you may not know, though, is how invested we are in the snacks that we consume. Compared to the U.S., sure, we are no match for the quantity and variety offered in the land of the free, home of the snacks. However, what we know in our hearts is that Canada has a long-standing, tried-and-true, flawed, yet beloved top-notch snack game. I’m talking about comfort foods that have become so integrated and so established that they are classified as cult-favourites—and no, I did not spell favourites incorrectly. You are about to see a lot more of the letter “U” in this article. Sorry! The great Canadian snack game is easy enough to understand. You think of a flavour and either slap it on a potato or pair it with chocolate. Snacking has always been a huge part of Canadian food culture, but it is only going up from here. To put it lightly, the past few years have been tough on everyone around the world, and Canadians have chosen to increase their spending on snacks by 67% as an indulgence or, personally, as a coping mechanism. In no way, shape, or form am I claiming to be a culinary expert somehow employed in the field of Finance, but I have eaten a lot in my life and right now, I’m the best and/or only Canadian guide you’ve got.
