Tribute to the Z-Man Sandwich

Chef Peter is from Kansas City, and he had high hopes that Patrick Mahomes and Kansas City would become repeat Super Bowl champions. Those hopes were dashed, but that didn't stop him from giving us the gift of the Z-Man sandwich, the award-winning, accolade-achieving, superhero sandwich of Kansas City. 

The Z-Man Sandwich is a Joe’s Kansas City Bar-B-Que staple. It starts with a toasted roll piled high with slow-smoked brisket, smoked provolone, crispy onion rings, and Kansas City-style barbeque sauce. If Chef Peter could have hosted a Super Bowl party, this monster of a sandwich would undoubtedly have been on the menu. Enjoy his tribute below! 


Tribute to the Z-Man Sandwich
Yield: 8 Sandwiches

Ingredients 

Brisket:

1/2 cup - light brown sugar 
3 tablespoons - kosher salt
1 tablespoon - cayenne pepper
1 tablespoon - smoked paprika
1 tablespoon - ground coriander
1 tablespoon - onion powder
1 tablespoon - garlic powder
1 tablespoon - black pepper
1 tablespoon - mild chili powder
3 pounds - brisket, trimmed

Onion Rings:

1 cup - all-purpose flour
1/4 cup - cornmeal
2 tablespoons - kosher salt
1 tablespoon - black pepper
2 quarts - vegetable oil
1 - onion, sliced into 3/4" rings
1/2 cup - buttermilk

Sandwiches:
8 each - Kaiser rolls, lightly toasted
8 slices - provolone cheese
3 pounds - brisket, thinly sliced
16 each - onion rings
1 cup - barbecue sauce
Directions

Brisket

1. Mix all dry ingredients together.
2. Cover the brisket completely and liberally with dry rub.
3. Preheat oven to 325ºF.
4. Place brisket on a baking sheet and place on middle rack of oven.
5. Roast brisket for 2 hours, then reduce heat to 225ºF and roast another 10-11 hours. 

 Onion Rings

1. Sift and mix all dry ingredients together.
2. Preheat oil in a large sauce pan or Dutch oven.  
3. Dip onion rings in breading and shake off excess. 
4. Dip onion rings into buttermilk.
5. Return onion rings to breading, coat thoroughly, and shake off excess and let sit for 2-3 minutes.
6. Fry onion rings a few at a time for 4-5 minutes or until light-golden and crisp.
7. Transfer to a paper towel-lined sheet pan.

Sandwiches

1. Top buns with 6-8 oz. warm brisket, slice of provolone, onion rings and BBQ sauce.
2. Enjoy and hope for a better outcome next year!

October 19, 2022 Canada is well known for many things. Hockey, snow, maple syrup, and a few other stereotypical but somewhat accurate concepts may immediately come to mind. What you may not know, though, is how invested we are in the snacks that we consume. Compared to the U.S., sure, we are no match for the quantity and variety offered in the land of the free, home of the snacks. However, what we know in our hearts is that Canada has a long-standing, tried-and-true, flawed, yet beloved top-notch snack game. I’m talking about comfort foods that have become so integrated and so established that they are classified as cult-favourites—and no, I did not spell favourites incorrectly. You are about to see a lot more of the letter “U” in this article. Sorry! The great Canadian snack game is easy enough to understand. You think of a flavour and either slap it on a potato or pair it with chocolate. Snacking has always been a huge part of Canadian food culture, but it is only going up from here. To put it lightly, the past few years have been tough on everyone around the world, and Canadians have chosen to increase their spending on snacks by 67% as an indulgence or, personally, as a coping mechanism. In no way, shape, or form am I claiming to be a culinary expert somehow employed in the field of Finance, but I have eaten a lot in my life and right now, I’m the best and/or only Canadian guide you’ve got. Let’s get into the details:
