Spiced Bourbon & Peach Parfait

Ingredients
Candied Walnuts
Walnuts - 1 cup
Brown sugar - 1/4 cup
Butter (unsalted) - 1 Tbsp.
Pinch of salt
Spiced Bourbon Peaches
Diced frozen peaches - 1 cup
Bourbon (or any dark spirit) - 1 fl. oz.
Butter (unsalted) - 1 Tbsp.
Brown sugar - 1/4 cup
Pinch of cinnamon
Pinch of nutmeg
Pinch of salt
Garnish
Vanilla Greek yogurt - 5 oz.
Ginger snap cookies, crushed
Whipped cream
Fresh mint leaves
Orange
Equipment
Non-stick pan
Rubber spatula
Sheet tray for cooling
Measuring cups
Cutting board
Knife
Parfait glass or dessert bowl
Citrus zester or microplane
Instructions
To make the Candied Walnuts:
1. Add all ingredients to a non-stick pan over medium heat. Stir often and watch for the sugar to melt. We are looking for the sugar to be completely dissolved (approximately 5-7 minutes).
2. Stir making sure the nuts are well-coated in the sugar/butter mixture.
3. Remove from pan and let cool on a paper-lined sheet tray. Separate any clumps.
To make the Spiced Bourbon Peaches:
1. Add diced, frozen peaches to the sauté pan and let some of the moisture cook out. Stir often.
2. Once peaches are thawed and most liquid is cooked down, turn the heat off. Add in bourbon, and turn heat back on.
3. Cook down alcohol by about half and add in butter, brown sugar, and seasonings. Stir often as to not burn. Cook down mixture until it starts to thicken up (approximately 5-7 minutes).
To build the Parfait:
1. Add crushed ginger snap cookies to the bottom of the dish and top with a generous layer of Greek yogurt.
2. Next, add a layer of the spiced bourbon peaches topped with the candied walnuts.
3. Garnish with fresh mind and orange zest, and enjoy!
